Poached Salmon With Creamed Brie

Ingredients

2 cups water
1/2 cup chopped onion
1 teaspoon chopped garlic, fresh or jarred organic
ground black pepper to taste
2 teaspoons lemon juice, fresh or bottled organic
4 pieces salmon fillet, about 6 ounces each
8 ounces brie cheese, rind removed
1 tablespoon Basil Pesto, homemade or jarred

Directions:

Combine the water, onion, garlic, pepper, and lemon juice in a large skillet heat to boiling. Add the salmon reduce the heat to a simmer, cover, and simmer gently until the salmon flakes to gentle pressure, about 8 minutes per inch of thickness of the fillets.

Remove the fish to a serving plate. Boil the poaching liquid until its volume is reduced to about 1/2 cup. Reduce the heat to low add the Brie and stir until the cheese melts. Stir in the pesto and spoon over the fish. Serve immediately.
