Wedding Soup

2 eggs
1/4 cup bread crumbs
1/4 cup grated Romano cheese
lemon rind to taste
pinch of nutmeg
3 cups chicken broth


Mix first 5 ingredients. Let stand a few minutes. Drop by teaspoonfuls into boiling chicken broth and simmer until done. Garnish with parsley. This recipe makes 2 servings; just multiply as needed.

Variation: Make a portion of your own favorite meatballs recipe. Form into balls about the size of marbles. When egg drop is done, add meatballs to broth and cook a few minutes.
