Broccoli Chowder

Ingredients

1 pound fresh broccoli
1 (13 3/4-ounce) can chicken broth, divided
1 1/2 cups skim milk
1 cup evaporated milk (skim)
1/2 cup lean cubed ham
salt to taste (optional)
1/4 teaspoon pepper
1 cup shredded lite Swiss cheese

Directions:

Combine broccoli stalks and 1/2 can chicken broth in casserole dish. Cover and cook 5 minutes on HIGH in microwave. Remove broccoli and cool, cutting into small pieces. Add remaining broth to dish with milk, ham, salt, and pepper. Microwave 5 minutes or until mixture boils. Stir in broccoli and cheese and microwave 3 minutes.

Editor's Extra: Try this with beef broth, too. The hardest part is chopping the broccoli!
