Instant Borscht

Serves: 4

1 medium onion
1 cup canned sliced beet, save juices
thin peel from 1/2 lemon
3/4 teaspoon salt
pepper to taste
2 tablespoons sugar
1 cup condensed beef broth
3 tablespoons sour cream
2 1/2 tablespoons lemon juice


With metal blade in place, use food processor to chop onion; add beets, lemon peel, salt, pepper, and sugar. Turn on and add all other liquid ingredients including saved beet juice. Blend until smooth. Serve chilled with a dollop of sour cream on top. Can also be done in a blender. Very easy. Do ahead.
