Creole Crab Gumbo

Serves: 6

1/2 cup sliced onion
4 tablespoons butter
4 tablespoons flour
1 pound crabmeat
1 pound okra, cut up
5 cups canned tomatoes
1 cup diced green pepper
2 garlic cloves, crushed
1 teaspoon ground nutmeg
2 teaspoons salt
freshly ground black pepper
2 cups water


Sauté onion in butter 10 minutes. Stir in flour and brown. Add crabmeat and other ingredients. Bring to a boil, reduce heat, cover, simmer for 1 hour.
