Crab Stew

Serves: 4

1/4 cup margarine
1/2 small onion, chopped
1/2 stem celery, chopped or 1/4 teaspoon celery seed
1 cup fresh crabmeat or 1 (6-ounce) can
2 tablespoons flour
2 1/2 cups milk
1/2 teaspoon salt
dash pepper


Melt margarine in heavy saucepan. Add chopped onion and celery and sauté until tender, but not brown. Add crabmeat and stir for a minute or two. Sprinkle flour over crabmeat and stir well. Add milk and stir constantly until thickened. Season. Serve in bowls with crisp crackers.

Editor's Extra: This also works with chicken or shrimp—a great first course, or a meal with a hearty salad.
