Broccoli Chowder

1 pound fresh broccoli
1 (13 3/4-ounce) can chicken broth, divided
1 1/2 cups skim milk
1 cup evaporated milk (skim)
1/2 cup lean cubed ham
salt to taste (optional)
1/4 teaspoon pepper
1 cup shredded lite Swiss cheese

Combine broccoli stalks and 1/2 can chicken broth in casserole dish. Cover and cook 5 minutes on HIGH in microwave. Remove broccoli and cool, cutting into small pieces. Add remaining broth to dish with milk, ham, salt, and pepper. Microwave 5 minutes or until mixture boils. Stir in broccoli and cheese and microwave 3 minutes.

Editor's Extra: Try this with beef broth, too. The hardest part is chopping the broccoli!

Fun Fact: The bagged salads and wrapped pre-cut vegetables now on the market can be nutrient savers as well as time savers. According to research at the University of Kentucky, the special plastic wrap and bags used for most of these products help keep them fresh longer and reduce the loss of vitamin C and beta carotene by regulating the amount of water, oxygen, and carbon dioxide inside.
