Bobbie’s Blackberry Cake

Ingredients

1 cup butter or margarine
2 cups sugar
3 eggs
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon ground cloves
2 cups blackberries with juice

Icing:
1 1/2 cups brown sugar
1 1/2 cups sugar
1 1/2 cups milk
1 tablespoon shortening
2 tablespoons butter or margarine

Directions:

Preheat oven to 350°. Grease and flour 3 round cake pans. Cream butter and sugar. Add eggs. Combine flour, soda, cinnamon, and cloves and add to creamed mixture. Blend in blackberries. Pour into cake pans and bake for 25–30 minutes. Allow to cool in pans 10 minutes, then invert onto racks to cool completely. Ice when cool.

Icing:
To prepare icing, combine sugars and milk in a saucepan. Cook, stirring constantly, until mixture forms a very soft ball in cold water. Remove from heat; add shortening and butter. Cool to lukewarm, then beat until thick and creamy. Spread icing between layers, and on top and sides of cake.
