Summer Garden Sandwich

2 large tomatoes, cored and thinly sliced
4 large lettuce leaves
2 thin slices red onions
8 thin slices cucumbers
2 potato rolls
6 teaspoons mayonnaise
4 gherkins


Toast the potato rolls. Spread the bottom half of each roll with 2 teaspoons of mayonnaise. Place a layer of lettuce, then cucumber, then tomato and finally onion on the bottom of each roll. Spread the top of each roll with 1 teaspoon of mayonnaise.

Garnish with the gherkins.
