Spiced Lamb Riblets

2 pounds small lamb riblets
2 cloves garlic, minced
1/4 teaspoon ground ginger
1/2 cup chili paste
1/4 cup sugar
1 tablespoon low salt soy sauce
2 tablespoons sesame oil
1/2 teaspoon freshly ground black pepper


Combine the garlic, ginger, chili paste, sugar, soy sauce, sesame oil and pepper in a bowl. Cut the riblets into separate pieces, add to the bowl, mix to cover the meat entirely, cover with plastic wrap and refrigerate for 3 hours.

Grill the riblets over high heat for 3 minutes on each side.
