Shish Kabob 2

3 pounds leg of lamb, cubed
1/2 cup polyunsaturated oil
3/4 cup lemon juice
2 tablespoons dry oregano
1/2 teaspoon freshly ground black pepper
6 medium tomatoes, quartered
3 medium onions, quartered
3 green bell peppers, quartered
1 pound mushrooms caps


Mix the lemon juice, oregano, pepper and oil, rub over the lamb and refrigerate for 6 hours or more.

Skewer the lamb on its own skewers. Alternate the tomatoes, onions, green pepper and mushrooms on other skewers. Broil the vegetable skewers for 20 minutes, basting with the remaining marinade. Add the lamb skewers and broil for 10 minutes, basting with the remaining marinade.
