Shish Kabob 1

3 pounds leg of lamb, cubed
6 tablespoons lemon juice
4 tablespoons polyunsaturated oil
2 tablespoons minced onions
1/2 teaspoon cayenne pepper
1 teaspoon ginger
1/2 teaspoon garlic powder
2 teaspoons curry powder
1 tablespoon kosher salt
2 onions, quartered
3 green peppers, quartered
3 tomatoes, quartered
8 mushrooms caps


Marinate the meat for 6 hours or more in a mixture of lemon juice, oil, minced onion, cayenne, ginger, garlic powder, curry powder and salt.

Place the meat on skewers. Alternate the green pepper, tomato and mushroom caps on skewers. Broil the skewered vegetables in a baking pan for 15 minutes. Then add the meat skewers and broil for 10 minutes more for rare, 12 for medium.
