Corned Beef Omelette Sandwich

Serves: 4

3 ounces extra lean corned beef
2 cups liquid egg substitute
1/4 teaspoon cream of tartar
1/2 cup diced sweet red pepper
1/2 cup fresh mushrooms, sliced
4 seeded, sandwich or bulky dinner rolls, toasted
2 tablespoons polyunsaturated oil
cherry tomatoes


Whisk the egg substitute and cream of tartar together until frothy. Fold in the corned beef, red pepper and mushrooms and cook in the oil in a skillet until firm.

Serve on seeded or bulky rolls garnished with cherry tomatoes.
