Chicken Canape

1/2 pound roasted chicken breast, finely chopped
1/4 cup slivered almonds, toasted
1/2 cup dry sherry
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper


Using the leftover meat from a roast chicken, finely chop the meat in a mortar with the slivered almonds. Add sherry until the mixture forms a smooth paste. Add salt and pepper and chill. Serve on rye crisps or vegetables.
