Caraway Pork

4 pounds lean boneless pork loin
2 teaspoons kosher salt
3 teaspoons caraway seeds
1/4 teaspoon freshly ground black pepper
1 large clove garlic, crushed
1/2 cup water
2 large onions, cut in thick slices


Trim the pork of all visible fat and brown slowly and thoroughly on all sides in a large Dutch oven. Skim off the fat. Rub with salt, caraway seeds and pepper. Add the garlic and water, cover and simmer 2 ½ hours. Place the onion slices around the meat and simmer for 30 minutes. Serve each slice of meat with a slice of onion.
