Artichoke Bits

1 (15-ounce) can artichoke hearts, drained and cut in half
1/4 cup extra virgin olive oil
1/4 cup red wine vinegar
1 teaspoon minced garlic
1 teaspoon Dijon style mustard
6 ounces dried beef jerky, softened in bouillon and cut into ½ inch strips


In a blender, combine the olive oil, vinegar, garlic and mustard until smooth. Marinate the artichokes in this dressing for four hours. Wrap each artichoke piece in a strip of jerky and secure with a toothpick. Bake on parchment paper on a cookie sheet at 300 degrees for 10 minutes.
