Maple Popcorn Balls

Total Calories: 6,724
Yield: one dozen

Ingredients

24 cups popped popcorn
2 cups golden raisins
2 cups chopped nuts
2/3 cup maple syrup
1 1/2 teaspoons maple extract
2/3 cup apple juice
1/2 cup butter , sliced
3/4 teaspoon salt
2 cups sugar

Directions:

Combine popcorn, raisins and nuts in a large bowl; set aside. Mix remaining ingredients in a large heavy saucepan. Cook and stir over medium heat until sugar dissolves. If mixture tries to rise above pan, lower heat. Watch closely, as temperature will rise very quickly toward the end. Stop stirring just before mixture reaches hard-crack stage, or 290 to 310 degrees on a candy thermometer. Immediately remove from heat and pour over popcorn mixture; stir to coat. Working quickly with buttered hands, form into tennis ball-sized balls. Cool; wrap in cellophane.

Tip: New plastic pails make whimsical picnic servers for party chips and snacks. Afterward, the kids can use them for treasure hunting around the backyard.
