Peanut Butter Turtle Cookies

Ingredients

1 cup flour
1/2 teaspoon baking soda
1/2 cup butter or margarine, softened
1/2 cup brown sugar packed
1/4 cup sugar
3/4 cup creamy peanut butter
1 egg
1 teaspoon vanilla extract
Sugar or green decorating sugar
1/2 cup peanut

Directions:

Preheat oven to 375°. Lightly grease two baking sheets.

In a small bowl, stir together flour and baking soda set aside.

In a small mixer bowl at medium speed, beat butter until creamy. Add brown sugar and 1/4 cup sugar and beat for 2 minutes or until fluffy, scraping bowl as needed. Add peanut butter, egg and vanilla. Beat at medium speed for 1 minute. Stir in flour mixture.

Roll 1/4 teaspoon of the dough into a small ball with a rounded point to make a head. Place on baking sheet. Roll a rounded teaspoonful of dough into a larger ball. Dip one side into white or green sugar and place sugar-side up next to and touching the rounded edge of the turtle's head. With a fork, flatten the larger ball slightly, making a crisscross on the top. Press peanut halves into sides for legs. Repeat with remaining dough and peanuts, placing cookies about 2 inches apart on baking sheets.

Bake for 8 to 10 minutes or until edges are golden brown. Cool cookies on wire racks.

Store in an airtight container.
