Pumpkin Soup


Serves: 8

Ingredients

2 chicken breasts, cubed
1 tablespoon oil
1/2 sweet onion, chopped
4 cups chicken broth
2 cups canned pureed pumpkins
1/8 teaspoon nutmeg
salt and pepper to taste
2 cups milk
grated Swiss cheese, for garnish

Directions:

In a large soup pot, heat oil.

Sauté chicken and onion until chicken is completely cooked. Add broth, pumpkin, and nutmeg. Simmer uncovered for 15 minutes.

Add milk and continue to simmer, without boiling, for 5 more minutes.

Salt and pepper to taste. Garnish with Swiss cheese.
