1. Preheat the oven to 200°F. Place a large wire cake rack over a jelly roll pan. In a deep Dutch oven, melt vegetable shortening over high heat to a depth of 2 to 3 inches and heat it to 350°F.
2. TO MAKE THE BATTER: Sift the flour, baking soda, and salt into a medium bowl. Stir in the cider just until smooth. In batches, dip the apple slices in the batter and place in the hot oil without crowding. Cook until golden brown, about 3 minutes. Using a wire-mesh skimmer, transfer the fritters to the wire rack and keep warm in the oven while frying the rest.
3. In a small bowl, combine the confectioners' sugar and spices. Sift evenly over the fritters and serve immediately.
