Spiced Apple Fritters With Hard Cider Batter |

The little town of Occidental, nestled in the California redwoods near Petaluma, is famous for its Italian restaurants, which compete to serve the biggest mountains of delicious family-style dinners. It's been too long since I've been there, but I remember my favorite part of the meal: apple fritters. This is how I make my apple fritters, with light batter scented with hard apple cider and aromatic spices.
Vegetable shortening or vegetable oil for deep-frying
HARD CIDER BATTER:
2/3 cup all-purpose flour
1/8 teaspoon baking soda
1/8 teaspoon salt
3/4 cup hard apple cider, preferably a medium-dry brand such as Bulmer's Woodpecker, or 1/2 cup fruity white wine, such as Gewüztraminer, and 1/4 cup apple juice
2 Golden Delicious apples, peeled, cored, and cut into 12 wedges
2 tablespoons confectioners' sugar
1 teaspoon

1. Preheat the oven to 200°F. Place a large wire cake rack over a jelly roll pan. In a deep Dutch oven, melt vegetable shortening over high heat to a depth of 2 to 3 inches and heat it to 350°F.
2. TO MAKE THE BATTER: Sift the flour, baking soda, and salt into a medium bowl. Stir in the cider just until smooth. In batches, dip the apple slices in the batter and place in the hot oil without crowding. Cook until golden brown, about 3 minutes. Using a wire-mesh skimmer, transfer the fritters to the wire rack and keep warm in the oven while frying the rest.
3. In a small bowl, combine the confectioners' sugar and spices. Sift evenly over the fritters and serve immediately.
