Gooseberry Conserve

3 pounds gooseberries, stems removed
3 pounds sugar
1 (16-ounce) package raisins
juice and zest of 3 orange
2 cups nuts, chopped or broken
4 pints 1- canning jars and lids, sterilized


Combine all ingredients except nuts in a large heavy saucepan. Bring to a boil over medium heat, stirring until sugar dissolves. Reduce heat and cook until thick, stirring frequently. Mix in nuts. Spoon into hot sterilized jars, leaving 1/4-inch headspace. Wipe rims; secure with lids and rings. Process in a boiling water bath for 10 minutes; set jars on a towel to cool. Check for seals.
