Yield: 1 large or 2 small cheese crocks
Combine all ingredients and blend together by hand. (Do not use a food processor, as it will purée the chopped ingredients.) Put in a crock and chill until ready to serve. Serve with crackers, Melba toast, or dark bread rounds.
Fun Fact: How did North Carolina get the nickname the Tar Heel State? The story goes that during one of the fiercest battles of the War Between the States, the column supporting the North Carolina troops was driven from the field.
