Magnificent Spring Salad

Ingredients

1 (16-ounce) can grapefruit segments, drained (reserve juice)
1 (10.5-ounce) can mandarin orange, drained (reserve juice)
1 medium cucumber, sliced thin
1 small onion, thinly sliced and separated into rings
orange juice
2/3 cup wine vinegar
1/3 cup sugar
1/4 teaspoon salt
pepper to taste
2 avocados, seeded, peeled, and sliced
lettuce

Directions:

In a large bowl, combine grapefruit, oranges, cucumbers, and onions. Measure reserved juices and add enough orange juice to make 1 cup. Combine juice mixture, vinegar, sugar, salt and pepper; pour over fruit. Cover and marinate in refrigerator for 2–3 hours. At serving time, add avocado slices and toss to coat. Remove ingredients from marinade and arrange on lettuce-lined plates. Drizzle some marinade on top.
