Curried Chicken Salad

3 cups cubed, cooked chicken
1 (8-ounce) can sliced water chestnut, drained
1 3/4 cups chopped green seedless grapes (or red seedless grapes)
1 cup finely chopped celery
3/4 cup mayonnaise or salad dressing
1 teaspoon curry powder
2 teaspoons soy sauce
2 teaspoons lemon juice
salt to taste
1 (11-ounce) can mandarin orange sections, drained (optional)


In a large bowl combine chicken, water chestnuts, grapes, and celery. Prepare Dressing in small bowl. Stir together mayonnaise, curry powder, soy sauce, lemon juice, and salt. Mix well. Stir dressing into chicken mixture; add Mandarin oranges, then toss to coat. Cover and chill up to 5 hours.
