Craisin Chicken Salad

4 cups cubed cooked chicken breasts
1 1/2 cups mayonnaise
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups craisins (dried cranberries)
1/2 cup chopped celery
1/3 cup chopped scallion
1 cup toasted pine nuts


Mix together in a large bowl the chicken, mayonnaise, salt, pepper, craisins, celery, and scallions. Refrigerate at least one hour before serving. Mix in toasted pine nuts just before serving.
