Roast Burritos

Ingredients

Roast Burritos
1 (16-ounce) can refried beans topped with cheese and salsa
2 cups yellow rice

Directions:

I'll save left over roast for a couple of weeks in the freezer then prepare this easy dish. Although as shown in the recipe nothing is added to the finished product it is fun to include any or all of the following chopped olives, sour cream, salsa, lettuce, and grated cheese. For an additional treat after folding the tortilla place in a frying pan with 1 to 2 tablespoons of oil which has been heated. Fry on both sides and the shell will be crunchy. Be careful with the hot oil. Place on a bed of lettuce and top with sour cream.
