Irish Brown Bread

Ingredients

4 cups whole wheat flour, preferably stone ground
2 cups unbleached white flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups buttermilk

Directions:

Preheat Dutch oven or cast iron skillet. Mix the flours, baking soda and salt in a bowl. Make a hole in the middle and add the buttermilk, stirring vigorously, to make a thick dough, not too floppy. Mix well and turn out onto a floured board. Make a round cake 2 inches high and 7 inches across. Lightly grease your DO or skillet. Add the dough and with a wet knife make a cross cut on the top. Bake for about 40 minutes, or until cooked through. Remove from the DO or skillet and wrap loaf in a clean tea towel to cool.
