Corn Pone Or Muffins

3/4 cup cornmeal
3/4 cup flour
1/2 cup sugar
1 1/2 teaspoons baking powder
3/4 cup milk
1/4 cup butter or shortening, melted
1 egg


Mix all ingredients together and bake in a 10 inch preheated Dutch oven, using 3-4 briquets underneath and 16-18 briquets on the lid. Bake for about 25-30 minutes. If using a muffin or biscuit pan, fill the cups and place pan in Dutch oven that will accommodate the pan. Bake, using about 4-6 briquets under the oven and 18-20 on the lid.

The dry ingredients may be mixed beforehand and kept in an air-tight container until needed. Then just add the liquid ingredients and bake.
