Dumplings

Ingredients

1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg, well beaten
1/2 cup milk
Large kettle of boiling water

Directions:

Beat egg, add milk, salt, flour, and baking powder, working into smooth dough. If dough is sticky, add a little more flour. Knead well. Divide dough into about 6 small pieces. Make a smooth dumpling by working or shaping the dough into round balls in your hands. Drop dumplings in boiling water and boil for 10 minutes. You can take one out and cut open to see if they are done.

When cooked, take out into a bowl and cut them in halves, using a string to cut the dumplings (makes them more even or smoother) or using 2 forks, tear dumplings in two. Do not cook them too long or they will get soggy. The dumplings must be cut into halves immediately. Cook a few at a time. Do not crowd them. Do not cover while cooking. Once they start cooking, turn heat down to medium and cook slowly, but keep water boiling.
