The dessert section is large because of the widely-held notion that to "eat light, eat right" means giving up desserts. This collection demonstrates that desserts can be an important part of a well-planned diet. Desserts can be high in fiber but low in fat, sodium, sugar and cholesterol and still taste wonderful. The trick is to use some foods in unfamiliar ways and not to expect that every recipe will fill everyone's needs. These directions may inspire additional versions, especially as new products become available.

For example, most of the testing for breads and desserts was completed before I discovered dried egg whites. I'm sure that they could be used in many recipes with excellent results. Low-fat, low-cholesterol egg substitutes may also be used in place of whole eggs with favorable results.
