Yeast Pancakes

1 1/2 cups buttermilk
3 eggs
1/4 cup vegetable oil
1 teaspoon vanilla extract
2 cups flour
3 tablespoons sugar
1 package yeast active dry
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt


In a medium bowl, mix buttermilk, eggs, oil and vanilla until well blended.

In a large mixer bowl, stir flour, sugar, yeast, baking powder, baking soda and salt. At low speed, gradually beat in buttermilk mixture until blended. At medium speed, beat for 2 minutes. Let stand at room temperature for 1 hour. Cover and refrigerate overnight.

To cook pancakes, stir down the mixture. Over medium heat, bake on a lightly greased hot griddle until bubbles appear and break turn and brown lightly. For a thinner pancake, add a little milk just before baking.
