Apple-Carrot Quick Bread

Ingredients

1 3/4 cups flour
2/3 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups apples peeled, shredded tart (about 2 medium)
1/2 cup carrot shredded
1/4 cup butter or margarine, softened
2 eggs
1/2 teaspoon lemon juice (optional)
1/2 cup coconut flaked

Directions:

Preheat oven to 350°. Grease bottom of an 8 1/2 x 8 1/2 x 2 1/2 -inch loaf pan. In a medium bowl, combine flour, sugar, baking powder, baking soda and salt set aside.

In a large mixer bowl at low speed, beat apples, carrot, butter or margarine, eggs and lemon extract until well blended. Add flour mixture and coconut beat until well moistened. Spread in pan. Bake for 50 to 60 minutes or until a wooden pick inserted in center comes out clean. Remove from pan cool on a wire rack.
