Turkey Chowder

Ingredients

1 pound ground turkey uncooked
1/2 cup cracker crumbs
2 tablespoons flour
1 teaspoon salt
1/8 teaspoon black pepper freshly ground
2 eggs
1/3 cup milk
2 tablespoons onions grated
8 cups turkey broth or chicken broth
4 carrots medium, sliced
3 potatoes new, medium, pared and diced
1/2 cup water
1/4 cup flour
2 tablespoons lemon juice fresh
Garnish:
2 tablespoons parsley chopped fresh

Directions:

Combine turkey, cracker crumbs, 2 tablespoons flour, salt, pepper, eggs, milk, and onion. Shape into 36 walnut-size meatballs. In large kettle, bring broth to boil. Add meatballs and return to boil cover, reduce heat, and simmer 10 minutes. Remove meatballs from broth and set aside. Add carrots and potatoes to broth cook for 20 minutes. Blend water and 1/4 cup flour add to broth, mix well, and cook 10 minutes. Add lemon juice and meatballs cook until heated through.
