Truffles

Ingredients

Filling
11.5 ounces milk chocolate chips
1/3 cup whipped cream
Coating Of Your Choice
Finely crushed peppermint candies, finely chopped toasted nuts, finely chopped coconut, chocolate sprinkles, or unsweetened cocoa powder

Directions:

1. To make truffles, constantly stir chocolate chips and cream over very low heat until chips are melted and mixture is well blended. Transfer to a small bowl. Beat with electric mixer at high speed for 5 minutes or until mixture is fluffy and room temperature, scraping as needed. Cover and chill 2 hours or until firm.

2. Form mixture into 36 balls, using about 1/2 tablespoon for each. Lightly butter hands if mixture is sticky. Roll balls in desired coating. Place in small paper candy cups or on wax paper. Cover and store in the refrigerator. Serve chilled. Refrigerate leftovers promptly.

Cordial Truffles: Use only 1/4 cup whipping cream. Prepare as above except, after beating for 5 minutes, beat in 2 tablespoons liqueur of your choice (coffee, peppermint, orange, amaretto, etc.).
