Spinach-Ham Quiche

Ingredients

1 unbaked 10-inch pie shell
1 tablespoon Dijon style mustard
1 1/2 cups onions coarsely chopped
2 tablespoons butter or margarine
4 ounces ham coarsely chopped
4 ounces spinach rinsed and coarsely chopped (4 cups lightly packed)
6 ounces Swiss cheese shredded (about 1 1/2 cups)
2 cups half and half
4 eggs
1 tablespoon cornstarch
1/2 teaspoon salt
1/4 nutmeg to 1/2 ground
1/8 teaspoon black pepper

Directions:

Chill pie shell for 1 hour. Spread mustard in bottom of pie shell and bake in a preheated 400° oven for 12 to 15 minutes or until edge of shell is golden brown.

In a large skillet over medium-high heat, saute onions in butter or margarine for 5 minutes (do not brown). Add ham and saute for 1 minute. Add spinach and stir for 2 to 3 minutes or until spinach is wilted and onions are tender. Cool slightly. Spread in bottom of pie shell. Sprinkle with cheese.

Place half-and-half, eggs, cornstarch, salt, nutmeg and pepper in a blender container. Cover and blend until smooth. Pour into pie shell.

Bake for 35 to 40 minutes or until puffed, golden brown and set in center. Cool at least 10 minutes before cutting into wedges. Serve warm or at room temperature.
