Silver Spoon Dessert

Ingredients

1 cup long grain rice raw, cooked, drained and hot
3/4 cup honey
1/3 cup raisins
2 tablespoons butter or margarine
1 tablespoon vanilla extract
Cream sherry
Unsweetened whipped cream
Toasted chopped nuts

Directions:

Preheat oven to 350°. Butter a shallow 1-quart baking dish or a 9-inch pie plate. To hot rice in saucepan, add honey, raisins and butter or margarine, stirring until butter or margarine is melted. Stir in vanilla. Spoon into baking dish or pie plate. MW Bake for 40 minutes or until golden brown, stirring after 25 minutes.

Serve warm in dessert dishes. Sprinkle 1 teaspoon sherry over each serving if desired. Top with a dollop of whipped cream. Sprinkle with nuts if desired.

MW To Microwave: Cover tightly with plastic wrap, piercing to allow steam to escape. Microwave at 100% power (700 watts) for 5 minutes or until bubbly, stirring once. Microwave at 30% power (210 watts) for 25 minutes or until rice is golden and raisins are plump, stirring three times. Cover with foil and let stand for 5 minutes. Serve as directed above.
