Rum Raisin Sundaes

Ingredients

2/3 cup raisins
1/3 cup rum dark
2/3 cup brown sugar packed
2 tablespoons cornstarch
1 1/4 cups water cold
2 tablespoons butter or margarine
1 teaspoon vanilla extract
1 quart vanilla ice cream

Directions:

At least 30 minutes or up to several days before serving:

In a small bowl, soak raisins in rum for 15 minutes.

In a 1-quart saucepan, mix brown sugar and cornstarch. Add water and stir until sugar dissolves. Stirring over medium heat, bring to a boil and boil for 1 minute or until shiny and slightly thickened. Remove from heat.

Stir in butter or margarine until melted. Add raisins, rum and vanilla. If making ahead, cover and refrigerate until ready to serve.

Reheat sauce over low heat, stirring occasionally. Serve warm over scoops of ice cream.
