Rich Tart Pastry

Ingredients

1/3 cup butter or margarine, softened
1/3 cup sugar
1 egg
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 teaspoon almond extract
1 1/4 cups flour

Directions:

Lightly spray a 9 x 1-inch tart pan or quiche pan with non-stick coating.

In a small mixer bowl at medium speed, beat butter and sugar until creamy. Beat in egg, vanilla, salt and almond extract until well blended. At low speed, gradually beat in flour until blended. With lightly floured hands, pat dough into tart pan. Place in freezer for 30 minutes.

Pierce bottom and sides of pastry thoroughly with a fork. Bake in a preheated 400° oven for 15 to 17 minutes or until center is set and edges are light brown. Cool on a wire rack. Fill as desired.
