Peanut Butter 'N' Pineapple Spread

1 (8-ounce) can crushed pineapple packed in its own juice, drained (reserve juice)
3/4 cup chunky peanut butter
3/4 cup coconut flaked
Whole wheat bread


Combine pineapple, peanut butter, coconut, and 1/4 cup reserved pineapple juice mix well. Spread 2 tablespoons on each piece of toasted whole wheat bread.

Note: This mixture is great on celery sticks and apple or pear slices.
