Peel peaches if desired. (See note at end of Peeling Tomatoes, for information on peeling peaches.) Chop peaches. Place in a medium bowl. Stir in sugar, cilantro, green onions, lime juice, gingerroot, and pepper. Place plastic wrap directly on surface of mixture to prevent discoloration and chill at least 3 hours for flavor to develop.
Stir before serving. Best used within 2 days.
Serve with grilled chicken, fish, tostados, sliced avocadoes, or with cream cheese and crackers as an appetizer.
