Old-Fashioned Buttermilk Pie |

Pastry for 9-inch Single Crust Pie
1 egg white slightly beaten
1/2 cup butter real, softened
2 cups sugar
3 eggs beaten
1/4 cup flour
1/4 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla extract
1/8 teaspoon almond extract (optional)
1/2 cup nuts chopped nuts of your choice

Prepare and prebake pie shell as directed. Remove from oven, set aside, and reduce heat to 300° F. Brush shell with egg white and allow to dry. In large mixer bowl cream butter; add sugar, 1/2 cup at a time, creaming well. Beat in eggs. Gradually blend in flour and salt. Stir in buttermilk, vanilla, and optional almond extract. Sprinkle nuts in bottom of prepared shell; pour in filling. Bake for 1 1/4 to 1 1/2 hours, or until knife inserted near center comes out clean. Cool.
Note: For a delicious, but less sweet pie, use 1 1/4 cups sugar.
