Navy Bean Or Lima Bean Soup

Ingredients

1 pound navy beans dried or 1 pound dried lima beans
2 quarts water cold (8 cups)
1 1/2 pounds ham bones meaty or ham hock
3/4 cup onion chopped
Salt and freshly ground pepper to taste

Directions:

Rinse beans add water and soak overnight. Next day, drain add 8 cups water and the ham. Cover and cook over low heat until beans are tender, 3 to 3 1/2 hours. Add onion during last hour of cooking. Remove ham bone or hock mash beans slightly, if desired, using potato masher. Cut meat from bone dice and return to soup. Season to taste.

Note: We like our beans whole, but soft with plenty of good tasty broth. According to a good authority, if you have after effects from eating beans, discarding the soaking water will more than likely get rid of this problem and you will be throwing away a minimum of protein and starch.
