Maple Baked Apples

Ingredients

4 apples tart baking (Rome Beauty, York Imperial or Jonathan)
1/3 cup pecans chopped
3 tablespoons raisins
3 tablespoons apricot preserves
1/2 teaspoon lemon peel (optional)
1/2 cup water
1/2 cup maple syrup or maple-flavored syrup
2 tablespoons butter or margarine
1/2 teaspoon cinnamon ground
1/4 teaspoon cloves ground
vanilla ice cream or whipped cream (optional)

Directions:

Preheat oven to 375°. Pare top half of apples remove cores. Stand fruit in an 8 x 8 x 2-inch baking pan. In a small bowl combine pecans, raisins, preserves and optional lemon rind. Fill apples with mixture and pour water into bottom of pan. Cover with foil, and bake for 45 to 55 minutes or until tender.

In a small saucepan combine syrup, butter or margarine, cinnamon and cloves. Bring mixture to a boil. Place apples in individual serving bowls. Pour on hot maple sauce. Top with ice cream or whipped cream, if desired.
