Lemon Frosting

2 cups powdered sugar
2 tablespoons vegetable shortening each solid vegetable and butter, softened
2 tablespoons lemon juice
1/8 teaspoon vanilla extract each vanilla and lemon extracts
food color yellow


Just before using:

In a small mixer bowl at low speed, beat powdered sugar, shortening, butter, lemon juice, vanilla and lemon extracts until blended. At medium-high speed, beat until light and fluffy. Beat in food color a drop at a time to obtain desired color.

Pipe or spread on Lemon Wafers or cookies or cakes of your choice.
