Lazy Grilled Chicken

Ingredients

1 broiler-fryer chicken (about 3 1/2 lb.), cut up
3 tablespoons lemon peels grated
1/2 cup lemon juice (2 to 3 lemons)
1/2 cup water
1/2 cup vegetable oil
1/2 cup soy sauce
3 teaspoons chicken bouillon
2 cloves garlic crushed
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper

Directions:

Rinse chicken and pat dry remove excess fat. Pierce chicken pieces with tines of a fork, then place in a large reclosable plastic bag or a shallow baking dish.

In a blender container, place lemon rind and juice, water, oil, soy sauce, bouillon granules, garlic, paprika, salt, and pepper. Cover and blend until garlic is minced. Measure 3/4 cup of the marinade cover and set aside for basting. Pour remaining marinade over chicken, turning to coat. Close bag or cover dish. Marinate in refrigerator 2 to 24 hours, turning pieces occasionally.

Remove chicken and discard marinade. If desired, precook chicken in the microwave. (See Microwave Shortcuts).

Spray cold grill grate of an outdoor grill with non-stick cooking spray or brush with oil. Place chicken on hot grill 5 to 6 inches above medium-hot coals. Turning and basting with reserved marinade every 5 minutes, cook 30 to 45 minutes until meat is no longer pink and juices run clear.


Serve with Cheese-Stuffed Zucchini or corn-on-the-cob and a mixed garden salad.
