Italian Peasant Soup

Ingredients

1/4 cup onion chopped
1 (16-ounce) can zucchini sliced in tomato sauce
1 (16-ounce) can vegetarian beans in tomato sauce
1 (15 1/2-ounce) can garbanzo beans drained
1 cup water
1/2 teaspoon Italian seasoning dried crushed

Directions:

In a small skillet over medium-high heat, cook sausage and onion until sausage is no longer pink and onion is tender drain well.

In a 2 1/2 -quart saucepan, combine zucchini with sauce, vegetarian beans with sauce, garbanzo beans, water and Italian herb seasoning. Stir in sausage and onion. Over medium heat, bring to a boil and simmer for 10 minutes.

Serve with grated Parmesan cheese if desired.
