Green Chili-Rice Bake

Serves: 10

   1 cup white rice raw
   8 ounces monterey jack cheese shredded (about 2 cups)
   1 cup sour cream
   1 7-ounce can green chilies chopped, drained
   1/4 cup butter or margarine, melted
   1/2 teaspoon salt
   1/2 cup cheddar cheese shredded
   Paparika


One and 1/4 hours before serving:

Cook rice according to package directions; drain if necessary. Cool.

Preheat oven to 350°. In a large bowl, combine rice, Monterey Jack cheese, sour cream, green chilies, butter or margarine, and salt. Pour into a 2-quart shallow casserole. Sprinkle with Cheddar cheese and paprika. Bake for 30 minutes or until heated through and bubbly around the edges. Garnish with pimiento strips if desired.
