Green Chili-Rice Bake

Ingredients

1 cup white rice raw
8 ounces Monterey Jack cheese shredded (about 2 cups)
1 cup sour cream
1 (7-ounce) can green chili chopped, drained
1/4 cup butter or margarine, melted
1/2 teaspoon salt
1/2 cup Cheddar cheese shredded
Paparika

Directions:

One and 1/4 hours before serving:

Cook rice according to package directions drain if necessary. Cool.

Preheat oven to 350°. In a large bowl, combine rice, Monterey Jack cheese, sour cream, green chilies, butter or margarine, and salt. Pour into a 2-quart shallow casserole. Sprinkle with Cheddar cheese and paprika. Bake for 30 minutes or until heated through and bubbly around the edges. Garnish with pimiento strips if desired.
