Granola Wheels

Ingredients

2 cups oats old-fashioned
1 1/2 cups whole wheat flour
1/4 cup wheat germ toasted
1 teaspoon baking soda
1/2 teaspoon salt
1 cup raisins
1/2 cup peanut dry roasted
1 cup brown sugar packed
2/3 cup chunky peanut butter
1/2 cup vegetable oil
1/3 cup honey
2 eggs
1 1/2 teaspoons vanilla extract

Directions:

Preheat oven to 375°. In a medium bowl, mix oats, flour, wheat germ, baking soda and salt. Stir in raisins and nuts set aside.

In a large mixer bowl, place brown sugar, peanut butter, oil, honey, eggs and vanilla. Beat at medium speed until well blended. Add oats mixture all at once. Beat at low speed, scraping bowl occasionally, until all dry ingredients are moistened.

For each cookie, place 1/4 cup of the mixture on a lightly greased baking sheet pat evenly into a 4-inch round, smoothing edges. Cookies should be 2 inches apart on baking sheet to allow for spreading. Bake for 12 minutes or until a deep golden brown. Remove immediately to a wire rack to cool. Store in an airtight container in a cool, dry place.
