2 cups bread crumbs soft
1/2 cup milk
1 egg
2 tablespoons ketchup
2 tablespoons mustard prepared
1 teaspoon salt
1 1/4 pounds ground beef
3/4 pound pork sausages hot
2 tablespoons onions minced
2 tablespoons parsley minced
1/2 cup ketchup
Parsley sprigs
At least 1 1/2 hours or up to 24 hours before serving:
Line a 7 1/2 x 3 3/4 x 2 1/2 -inch loaf pan with waxed paper. In a large bowl, mix bread crumbs, milk, egg, catsup, mustard and salt; let stand for 5 minutes.
Add ground beef, sausage, onion and parsley; mix until well blended. Pack half of the mixture into loaf pan. Turn out onto a jelly roll pan. Re-line loaf pan with waxed paper. Form second meat loaf and turn out onto jelly roll pan, leaving at least 3 inches between loaves. If making ahead, cover and refrigerate up to 24 hours before baking.
Brush loaves with catsup. Bake, uncovered, in a preheated 350° oven for 1 hour or until well browned on outside and inside is no longer pink. Let stand for 5 minutes. Transfer to a serving platter. Garnish with parsley. Slice witha sharp knife.
